Let me start by saying this is ADDICTING and glorious. If you bring it to a party, don’t expect to bring any home. For some reason it is just a huge hit! It has the same ingredients as normal old salsa and guacamole, but it’s WAY prettier and WAY more creative! In my former life as a coupon blogger, I did this as a guest post for The Cents’Able Shoppin’, but with this new and improved blog I decided it was time to resurrect the deliciousness!
This guac-a-salsa is really easy, really fresh, and really healthy. I really don’t care for using canned ingredients. I’ve been making this for years, I think I originally got the base recipe off of the Food Network, and over time I have added some things to it that I think make it much more tasty! It’s best with home made tortilla chips (recipe soon) which are also super easy, and actually cheaper than buying a bag of chips!
Avocado Corn Salsa
What you need:
-2 ripe avocados, not too hard, not too mushy
-1 pint grape tomatoes
-3/4 cup frozen corn, thawed but not cooked
-2-3 tbs fresh cilantro, chopped very finely
-2 green onions, thinly sliced
-1 jalapeno or serrano pepper, seeded and finely chopped if you like it spicy!
-Lime Juice (you can use real limes or the lime juice that comes in a plastic lime, either one works)
What you do:
-Cut each grape tomato into quarters. Put them into a large bowl.
-Peel your avocados and remove the pit. Slice them into pieces roughly the same size as your grape tomato quarters and add to the bowl.
-Mix these ingredients together, adding in the corn as well.
-Add chopped cilantro and peppers and mix again. (At this point you can add more cilantro or chiles if you think it needs more flavor).
-Finally, squirt in some lime juice and give it a pinch of salt. These are both to taste, but remember to start out small. You can always add more but you can’t take any out! A little bit goes a long way with lime flavor.
-Enjoy with store bought tortilla chips, or for an extra flare (and extra party compliments) serve with homemade tortilla chips (recipe soon to follow
